No, it's not celery. Everyone is obsessed with these celery juices (I won't lie, I only like celery in soup or dipped in Ranch) but I have found my own green obsession. Tomatillos!
What is a tomatillo?
A tomatillo, like a tomato is apart of the nightshade family. It looks like a green tomato with a thin green husk covering it. The inside is more firm than a regular tomato and similarly has small seeds. It has a slightly sour/acidic taste to it and is originally from Mexico.

I have had them in the past but my husband recently bought a couple home and they sat there for a while because I had no clue what to do with them. I knew they made a good salsa and went good on enchiladas but that was it. Then my husband said something about making a sandwich with tomatillos and avocados and I decided to try it!

I called it a Green Goddess Sandwich and it was delicious! My husband even approved and the best part was that it only took a few ingredients and a few minutes to make!
The Green Goddess Sandwich
- 2 Slices of Oatnut Bread (I used Orowheat)
- Miracle whip for spread
- Sliced tomatillos (peel the paper layer off and rinse until not sticky)
- 1/2 avocado sliced
- Salt and pepper to taste
-Green tabasco sauce (optional)
- For a little crunch, add sprouts

While the sandwich is amazing, I urge you to experiment and try the different salsas and chilis, and fried tomatillos with basil and mozzarella! Roasting them is also a great way to cook them! You can also just eat them raw with salt and pepper or green tabasco. Either way, they are going to be good!
