Ask my family and they will tell you that I am not the best cook nor do I try to be. I am good at throwing leftovers in a bowl, making desserts, and salads. I'm always glad when the weather starts to get warmer because my family begins to only want fruit, salads, and pastas, so I feel less stressed about what to make for dinner. So with summer coming, I've been watching a lot of cooking shows and pinning nearly everything to my Food Lust Board. I consistently check recipes from 4 women in the industry that I adore and are all about meals for the family.

Joanna Gaines, Nadia Hussain, Chrissy Teigen-Legend, Ayesha Curry
Joanna Gaines's Peach Caprese Salad
My husband says he can always tell when it's about to be summer because I start craving peaches and nectarines like clockwork! That's why when I came across Joanna's Peach Caprese Salad, I was thrilled! I've always liked the traditional Caprese salad with basil, mozzarella cheese, and tomato but this is a new refreshing spin on it. The sweet peaches and mozzarella drizzled in basil and balsamic vinaigrette are so good! You can find this recipe in her cookbook Magnolia Table: A Collection of Recipes for Gathering or on the Purewow website HERE.

Nadiya Hussain's Blender Beetroot Pasta
I, like most people always hated beets. I thought they tasted like purple dirt. It wasn't until a year ago that I tried a recipe that changed that drastically. It was a Tone It Up recipe called Beat the Bloat Beet salad (find the recipe HERE). Now I've grown to love them and look for more recipes that use it as a base. If you like beets then I'm sure you will enjoy this savory beetroot pasta (I can already taste the feta and dill) by the beautiful Nadiya Hussain. I first discovered her on a cooking show on Netflix (Nadiya's Time to Eat) and loved her personality and vibrance instantly! You can purchase Nadiya's book Time to Eat HERE or get the recipe from The Happy Foodie HERE.

Chrissy Teigen's Chicken Lettuce Wraps
I love Chrissy! She is unapologetically herself and will standup to whoever challenges her. She's not only a badass mom, wife, actress, model, and host, but she also makes great food and cookware! While I love a lot of her recipes, this one reminds me of when my mom and I use to make lettuce wraps. It took a lot of time but the taste was worth it and it was healthier than eating burgers and fries. The sauce alone has that sweet and spicy flavor of Sriracha, Thai sweet chili, and hoisin sauce. Mouth watering. You can find her recipe in her book Cravings: Recipes for All the Food You Want to Eat or at Health.com HERE.

Ayesha Curry's Citrus Shrimp Salad
I don't make shrimp dishes often because some of my family members have a mild allergy to shellfish but this dish sounds too good to pass up! Ayesha has paired orange citrus flavors with shrimp and avocado and for me, those flavors always go together! This is probably a dish I would make for my own indulgence and use a substitute protein for my guys or make it as a light meatless dish. To get Ayesha's recipe, go to The Food Network website HERE.

I can't wait to make these dishes and not spend all day in the kitchen! If I make enough then we can have some for another meal later! These will also be easy for my husband to take to work since he can't use microwaves (construction is rough lol). What summer dishes are you anxious to make? Please let me know! Now all we need is a few drinks to pair with these dishes!
With Love,
Micole Elise
