Fall Comfort Foods

With Halloween over and colder weather on the way, there's nothing more comforting than food! Below are a few recipes to give you and your family a little comfort before you decide to over indulge in Thanksgiving feasts and become uncomfortable due to over eating because let's face it, we all do it!

1. Soup

Roasted Butternut Squash Soup

My husband and I made this last month and it was so good that we will be making it again! If you can find bread bowls for this soup, I highly recommend it. I also like a little bit of sour cream on top!

Chicken Tortilla Soup

This is one of my favorite soups and I could eat it all the time. It's very filling and you can always alter the recipe to fit your taste buds.

2. Salad

Harvest Cobb Chicken Salad

I have not tried this recipe yet but I have every intention to do so! There are so many good staples in this salad and it would be easy to prep double the ingredients so you can save the leftovers for another salad later on in the week!

3. Pasta

Pumpkin Pasta with Sausage and Sage

I know everyone is over the pumpkin flavored everything by now but I had to sneak in one last thing. This seems like a very easy recipe, especially for a large family and add Hawaiian rolls (sorry for all the carbs) and you're good to go!

Lasagna Stuffed shells

Every time I go back to North Carolina to visit my mom, I always ask her to make these for me! They are one of my favorite dishes that she makes and my daughter is very fond of the large shell noodles.

4. Chili

Killer Vegan Chili

My family are meat eaters so I haven't tried this one yet either but every once in a while I can sneak in a meal that is meatless and healthy and they will eat it.

Another type of chili I haven't tried yet but really look forward to trying!

5. Sandwiches

Ham, Brie, and Apple Panini

This is my favorite sandwich and I usually use black forest ham, brie cheese, and green apple slices for my panini and that's all I need. The recipe link provided below has more ingredients but it is all about what your taste buds like.

Turkey, Spicy Mustard, and Cranberry Panini

Arby's makes a seasonal sandwich called the gobbler that my husband loves. Something about the cranberry sauce and spicy mustard make him really happy! This recipe is a little different but again, alter to your liking!

6. Deserts

Cranberry Bliss Bars

Every year I use to go to Starbucks to get a cranberry bliss bar and one day I just decided that I would make my own version. I actually liked making them better because I could add more cranberries and a little less chocolate. I like the balance of the sweet and tangy taste.

Stay tuned because the next post will be about finding comfort in a cup and the drinks may or may not contain alcohol....
